Ingredients

 Mushrooms2 , thinly sliced
 2 tablespoons diced green or sweet red peppers
 Scallion1 , thinly sliced
 Olive oil1/4 Teaspoon
 Flour tortilla1
 Tomato Paste1 Tablespoon
 Dried basil1/8 Teaspoon
 Dried oregano1/8 Teaspoon
 Ground black pepper1 Pinch
 1/4 cup shredded part-skim mozzarella cheese

Directions

In a small bowl, combine the mushrooms, peppers, scallions, and oil.
Microwave on high for 2 minutes, or until the vegetables are crisp-tender.
Prick the surface of the tortilla all over with a fork.
Place between two paper towels.
Microwave on high for 1 1/2 minutes, or until somewhat crisp.
Place the tortilla on a plate.
Spread with the tomato paste.
Sprinkle with the basil, oregano, and pepper.
Top with the vegetables and sprinkle with the cheese.
Microwave on high for 30 to 45 seconds, or until the cheese is melted.
