Ingredients

 Onion1 Large, sliced
 Garlic1 Clove (5gm), minced
 Parsley1/4 Cup (16 tbs), minced
 Salt2 Teaspoon
 Ground pepper1/2 Teaspoon, dried
 Cooking oil2 Tablespoon
 1 pound green beans, cut
 Tomatoes3 Large, quartered
 2 cups diced summer squash, sliced 1 inch thick

Directions

1. Cook onion, garlic, parsley, and seasonings in oil in a large skillet for 3 minutes.
2. Add beans with 1/2 cup water and simmer, covered, for 10 minutes.
3. Add remaining vegetables, cover and cook until tender but crisp. Don't overcook.
