Vegetable Medley Recipe
Ingredients
| Onion | 1 Large, sliced | |
| Garlic | 1 Clove (5gm), minced | |
| Parsley | 1/4 Cup (16 tbs), minced | |
| Salt | 2 Teaspoon | |
| Ground pepper | 1/2 Teaspoon, dried | |
| Cooking oil | 2 Tablespoon | |
| 1 pound green beans, cut | ||
| Tomatoes | 3 Large, quartered | |
| 2 cups diced summer squash, sliced 1 inch thick | ||
Directions
1. Cook onion, garlic, parsley, and seasonings in oil in a large skillet for 3 minutes.
2. Add beans with 1/2 cup water and simmer, covered, for 10 minutes.
3. Add remaining vegetables, cover and cook until tender but crisp. Don't overcook.
