Vegetable Medley Recipe
Ingredients
| Raw carrots - 1 1/2 cups, diced | ||
| Water | 1 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
| Cabbage | 2 Cup (16 tbs), finely shredded | |
| Onion | 1/4 Cup (16 tbs), chopped | |
| Celery | 1/2 Cup (16 tbs), chopped | |
| Butter or oil - 1 tablespoon | ||
| Parsley | 1 Tablespoon, snipped | |
Directions
MAKING
1. In a saucepan, boil ½ cup boiling water, add carrot, cover and cook for about 10 minutes.
2. Uncover and add the remaining ingredients including remaining 1/2 cup boiling water; cook for another 10-15 minutes until the vegetables are just tender.
SERVING
3. Serve hot over a bed of rice.
