Ingredients

 
12 small or 6 medium-size new potatoes (12 ounces), scrubbed
 
1 medium-size zucchini (about 6 ounces), sliced 3/4 inch thick (8 slices)
 
1 medium-size yellow squash (about 6 ounces), sliced 3/4 inch thick (8 slices)
 
1 tablespoon plus 1 teaspoon olive oil
 
2 teaspoons red wine vinegar
 
1/2 teaspoon dried thyme, crumbled
 
1/4 teaspoon each salt and black pepper, or to taste

Directions

1 Bring a stockpot of unsalted watertoa boil.
Add the potatoes and cook for 12 to 15 minutes or until almost tenderwhen pricked with a fork.
Drain, rinse under cold waterto stop the cooking, and drain again.
2 Meanwhile, place the zucchini and yellow squash slices in a bowl of cold waterand let them stand for 10 minutes.
Drain and pat dry with paper toweling.
Arrange the potatoes, zucchini, and yellow squash alternately on four 8 inch-long skewers.
The skewers may be covered and refrigerated for up to 5 hours.
3 Preheat the broiler, setting the rack 6 inches from the heat, or preheat a gas grill to high, or prepare charcoal to the white ash stage.
In a small bowl, whiskto-getherthe oil, vinegar, thyme, salt, and pepper.
Usinga pastry brush, brush the mixture on the vegetables.
Broil or grill the kebabs, turning occasionally, for 12 minutes or until browned on the edges and the squash are crisp-tender.
