Vegetable Frittata Recipe
Ingredients
1 small thinly sliced onion
1/2 small thinly sliced zucchini
1/2 cup sliced fresh mushrooms
4 asparagus spears, cut into 1/2-inch pieces
2 tablespoons melted butter
8 beaten eggs
1/2 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
Dash hot sauce
Directions
Preheat oven in Convection Bake to 375°F (*350°F).
Place onion, zucchini, mushrooms, asparagus and butter in 9-inch deep pie pan or quiche dish. Microwave at HIGH 3 to 4 minutes or until crisp tender.
In small mixing bowl, combine eggs, milk, salt, pepper and hot sauce. Blend well. Pour over vegetables.
Convection Bake for 25 to 40 minutes or until center is set.
