Chinese Style Vegetable Fried Rice Recipe

Ingredients
150g long grain rice
4 tablespoons vegetable oil
2 cloves garlic, finely chopped
1cm piece fresh root ginger, peeled and grated
1 tablespoon Chinese winter pickle
6 tomatoes, seeded and chopped
1 large red pepper, seeded and diced
6 dried black winter mushrooms, soaked in hot water from 25 minutes, drained, squeezed and diced
60g cooked peas, or frozen peas, thawed
125g cucumber, diced
2 tablespoons light soy sauce
Directions
Cook rice in plenty of boiling water for 15 minutes until tender but still firm to the bite.
Drain and rinse with boiling water.
In a wok, heat oil, add garlic and ginger, fry for 30 seconds then add pickle, tomatoes, pepper (capsicum) and mushrooms, peas and cucumber.
Stir fry for 4 minutes then stir in soy sauce.
Add rice, mix well and heat through for 2-3 minutes.
Drain and rinse with boiling water.

Stir fry for 4 minutes then stir in soy sauce.
Add rice, mix well and heat through for 2-3 minutes.
