Ingredients

 
1 tablespoon olive oil
 
1 1/2 cups sliced Mushrooms (6 ounces)
 
1 cup chopped onions
 
1/4 cup chopped sweet red pepper
 
4 cloves garlic, minced
 
1/4 teaspoon dried thyme leaves, crushed
 
1/8 teaspoon pepper
 
1 1/4 cups Vegetable Juice
 
1 cup shredded zucchini
 
1 cup quick-cooking couscous, uncooked

Directions

In 3-quart saucepan over medium heat, in hot oil, cook mushrooms, onions, red pepper, garlic, thyme and pepper until vegetables are tender-crisp, stirring often.
Stir in juice and zucchini; heat to boiling.
Remove from heat.
Stir in couscous.
Cover; let stand 5 minutes or until liquid is absorbed.
