Vegetable Cheese Pita Sandwiches Recipe

Ingredients
1 tablespoon butter or margarine
1 cup sliced cauliflower
1, cup sliced broccoli
1 cup sliced carrots
1/2. cup sliced green onions
1 cup chopped tomatoes
1/4 teaspoon oregano leaves
1/4 teaspoon basil leaves
1 cup (4 ounces) shredded Cheddar cheese
4 pita bread loaves
Directions
1. Put butter, cauliflower, broccoli and carrots into a 2-quart glass casserole. Cover with an all-glass lid or plastic wrap. Cook in microwave oven 3 to 4 minutes at High, or until tender.
2. Toss sauteed vegetables with green onions, tomatoes, oregano, basil and cheese.
3. Cut pita bread loaves in half. Divide vegetable mixture evenly in all pita bread halves.
4. Wrap each sandwich in a paper towel and place cut-side-up in a glass baking dish. Heat sandwiches in microwave oven to serving temperature (about 3 1/2 minutes at High).
