Vegetable Casserole Indian Style Recipe
Ingredients
| 3 onions, peeled and sliced | ||
| Turmeric | 1/2 Teaspoon | |
| Cumin seeds | 1/2 Teaspoon | |
| 2 teaspoons cornflour or flour | ||
| Green chilli | 1/2 , finely shredded | |
| Garlic | 3 Clove (5gm), finely chopped | |
| 6-8 oz. green peas or broad beans | ||
| 2 green peppers, de-seeded and cut into squares | ||
| Tomatoes | 3 Large, skinned | |
| Salt | 1 Pinch | |
| Oil | 2 Tablespoon | |
| Lemon juice | 1 Tablespoon | |
Directions
MAKING
1) Coat onions with turmeric, cumin and flour.
2) In a bowl, combine together chilli, peas or broad beans and peppers and then add in garlic.
3) Take a casserole and arrange a layer of onions in it.
4) Top with peppers and then with tomatoes.
5) Season with salt and repeat the layers till the layering ingredients are used up.
6) Add oil to the top of these layers.
7) Cover the casserole with a lid and heat the mixture in a little liquid until cooked.
SERVING
8) Serve the casserole with lemon juice poured over.
