Vegetable Burrito Banditos Recipe
Ingredients
| Carrots | 1/2 Cup (16 tbs), shredded | |
| Broccoli | 1/2 Cup (16 tbs), chopped | |
| Cauliflower | 1/2 Cup (16 tbs), chopped | |
| Green onions | 2 Small, thinly sliced | |
| 1/4 c. nonfat Ranch salad dressing | ||
| 1 c. shredded low fat Cheddar cheese | ||
| Chili powder | 1/2 Teaspoon | |
| 4 (7 inch) tortillas (flour type) | ||
| Iceberg lettuce | 1 Cup (16 tbs) | |
Directions
In a mixing bowl, combine carrots, broccoli, cauliflower and onions with cheese, dressing and chili powder.
Lay tortillas flat on the counter and spoon about 1/2 cup vegetable mixture and 1/2 cup lettuce down center.
Wrap each tortilla around vegetable mixture.
