Vegetable Burger Stew With Tomatoes Peas And Cheese Topping Recipe
Ingredients
| Vegetable oil | 3 Tablespoon | |
| 2 tablespoons chopped shallots or onion | ||
| Butter/Margarine | 2 Tablespoon | |
| 6 vegetable burgers, cubed | ||
| Ground black pepper | 1 To taste | |
| Chopped tomatoes | 1 16 Ounce | |
| Mixed herbs | 1 Teaspoon, dried | |
| Bay Leaf | 1 | |
| Frozen peas | 2 Pound | |
| Cheddar Cheese | 1/2 Cup (16 tbs), grated (For the garnish) | |
| Salt | To Taste | |
Directions
Heat the oil in a frying pan and saute the onion until lightly browned.
Melt the butter in a separate saucepan and brown the burger chunks (about 5 minutes in total).
Mix the onions and burger chunks together and add all the remaining ingredients except the peas and grated cheese.
Stir well.
Cover the pan and simmer the mixture for 20 minutes, adding a little vegetable stock or water if necessary to keep the mixture moist.
Add the peas and cook for a further 10 minutes.
Melt the butter in a separate saucepan and brown the burger chunks (about 5 minutes in total).
