Baked Tofu and Veggie Meat Vegan Meat Loaf Recipe Video
Ingredients
| Frozen chopped spinach | 10 Ounce, thawed, drained and squeezed dry (1 Package) | |
| Vegan margarine | 1 Tablespoon | |
| Sliced mushrooms | 8 Ounce | |

| Veggie ground beef | 21 Ounce (1.50 Package) | |
| Shredded vegan cheddar cheese | 1 Cup (16 tbs) | |
| Fine dry bread crumbs | 1⁄2 Cup (8 tbs) | |

| Pureed soft silken tofu | 1⁄4 Cup (4 tbs) | |
| Pureed soft silken tofu | 1⁄4 Cup (4 tbs) | |
| Soy sauce | 2 Teaspoon | |
| Ketchup | 1⁄4 Cup (4 tbs) | |
| Crushed garlic | 2 Clove (10 gm) | |

Directions
Preheat oven to 350°F.
Place the spinach in a large bowl, set aside. Heat the margarine in a
large heavy skillet over medium heat. Saute mushrooms and onion
until onion is translucent. Transfer mushroom mixture to bowl with
spinach. Mix in 1/2 cup bread crumbs and 1/4 cup tofu. Season
with salt, pepper and nutmeg.
In a large bowl, combine veggie ground beef, cheddar cheese, 1/2
cup bread crumbs, onion and tofu. Season with soy sauce,
ketchup, garlic, salt and pepper.
Lightly grease a muffin tin with non stick spray. Mix the meat and
spinach together and fill each muffin cup with the mixture.
Bake in preheated oven for about 30-40 minutes. Allow to cool in
muffin tin for about 5-10 minutes before removing them and
serving
