Vegan Chocolate Chip And Banana Cake Recipe Video
The recipe of Vegan Banana Chocolate Chip Cake does not include any eggs or dairy products. It is both low in fat and good for your health. Sweet and nutritious dessert, which you can enjoy without worrying much.
Ingredients
Unbleached flour or whole wheat pastry flour - 1-3/4 cups
Cane sugar or turbinado sugar - 1 cup
Baking powder - 2 teaspoons
Fine salt - 1/4 teaspoon
Soy milk - 3/4 cup
Bananas - 2, overripe, mashed
Sunflower oil or any light vegetable oil - 1/2 cup
Vanilla - 1 teaspoon
Vegan chocolate chips - 3/4 cup
Directions
GETTING READY
1 Preheat the oven to 350 degrees F.
2 Spray a 9-inch square or round pan with Pam or other baking spray.
MAKING
3 In a bowl, put the dry ingredients and blend with a fork.
4 Add oil, soy milk and vanilla, stir until the mixture comes together, but don't overmix.
5 Break bananas into chunks and drop into the batter.
6 Mash with a fork and mix briefly.
7 Gradually fold in the chocolate chips.
8 Pour the mixture into the prepared pan.
9 Bake on the center rack for 35-40 minutes, just until cake tester comes out clean.
10 Remove from the oven and place on wire rack to cool.
SERVING
11 To serve sprinkle with powdered sugar and enjoy.
12 Also tastes great with crushed pineapple or berries.
TIPS
If you like a smoother banana texture, break bananas into a separate bowl, mash and mix well, until smooth, then fold into the batter.
Overmixing your batter will create a more dense cake with a tougher crumb.

This is a wonderful recipe! I made mine gluten free with brown rice flour. I didn't add sugar, I substituted 1/2 cup agave nectar and one container of baby food Squash. I also added dried cranberries ( no sugar) . Instead of powdered sugar, I drizzled plates with banana flax oil. Huge hit, even with two year olds!

This cake is awesome. I tweaked it a little to make it gluten free for my daughter. I used buckwheat flour instead of regular flour and only put 1/2 the sugar. It was fantastic!!!

Hi there,
I tried this cake, it was really good...it was so moist and no eggs and butter ...great. only thing, it was turned out too sweet for us. i had cut back on the sugar...but still.
But all in all, we finished it in no time ...defy goes on my fav list.
no guilt cake ...or is it ? how much sugar do u think goes in one serving ?
