Veal Scallops In Sour Cream Recipe

Ingredients
4 veal scallops, no more than 1/2 inch thick
3 tablespoons butter
3 tablespoons vegetable oil
1/4 cup finely chopped onion
1 cup sour cream
1/2 cup shredded Norwegian goat cheese
Salt to taste
Freshly ground pepper to taste
Directions
Pound scallops to 1/4 inch thickness.
Set aside.
Melt 1 tablespoon butter and 1 tablespoon oil in a large skillet.
Add finely chopped onion, cook for 3 to 5 minutes.
Do not brown the onion.
Take onion from skillet and set aside.
Add remaining butter and oil to skillet, fry veal scallops over moderate heat until golden brown, about 5 minutes per side.
Keep scallops warm in a low oven while you prepare the sauce.
Pour off most of fat left in skillet.
Add onion and cook again 2 to 5 minutes.
On low heat slowly stir in the sour cream and cheese.
Continue stirring until sauce is smooth.
Add seasonings to taste.
Return veal to sauce.
Baste meat and let it simmer for 2 minutes.
Serve at once.
