Veal Scallopini with Marsala Recipe

Ingredients
1/4 pound mushrooms
1 tablespoon butter or margarine
1 1/2 teaspoons lemon juice
1 pound veal cut for scallopini
1 tablespoon cornstarch
1/2 teaspoon salt
freshly ground pepper
1/4 cup Marsala or dry Sherry
1/2 teaspoon beef stock base dissolved in 2 tablespoons water
1 clove garlic, minced
1 tablespoon chopped parsley
Directions
Slice mushrooms thinly.
Using a large frying pan, saute mushrooms in half the butter with the lemon juice just until glazed; turn out of pan and set aside.
Cut veal into 1 inch wide strips.
Mix together cornstarch, salt, and pepper and sprinkle over meat, coating evenly.
Melt remaining butter and brown part of the meat at a time, cooking quickly, and turning to brown both sides.
Remove to a platter.
Pour in wine and beef stock.
Add garlic and cook 1 minute, scraping up drippings.
Return mushrooms and meat to the pan and heat through.
