Veal Printanier Recipe
I am sharing this recipe of Veal Printanier which is near and dear to my heart. A great Side Dish recipe is one like this. You don't need to think more. Just prepare this Veal Printanier now!
Ingredients
2 tbsp (30 mL) veal fat or butter
2-lb (1 kg) veal shoulder cut in small pieces
1 tsp (5 mL) paprika
3 tbsp (50 mL) butter
3 tbsp (50 mL) flour
3 cups (750 mL) milk
1/2 tsp (2 mL) thyme and 1 bay leaf
1/4 tsp (1 mL) marjoram
1/2 lb (250 g) mushrooms, thinly sliced
10 to 12 small white onions, peeled, whole
2 carrots, thinly sliced
1 cup (250 mL) fresh or frozen green peas
Directions
Microwave the 2 tbsp (30 mL) fat or butter 3 minutes at HIGH in a 6-cup (1.5 L) ceramic bak-ing dish.
The butter should brown lightly; microwave one minute more if necessary.
Sprinkle meat with paprika, place in the browned butter, stir and microwave 5 minutes at HIGH.
To make a white sauce, place the butter in a 4-cup (1 L) glass measuring cup and microwave 2 minu-tes at HIGH.
Add the flour and mix together.
Add the milk, mix, then microwave 2 minutes at HIGH.
Stir, microwave 2 minutes more at HIGH.
Stir, and continue in this manner until you have a light white sauce.
Salt and pepper to taste and add the thyme, bay leaf and marjoram.
Mix together.
Pour over the meat.
Stir, cover and microwave 8 minutes at HIGH.
Add the mushrooms, onions, carrots and green peas*.
Mix well together.
Cover and microwave 35 to 40 minutes at MEDIUM.
Serve with parsleyed rice or fine noodles and a bowl of grated cheese, allowing each person to help himself.
