Veal Parmesan Recipe

Veal parmesan is a cooked veal preparation with parmesan cheese and bread crumbs. Browned in a skillet with paprika for flavor the veal parmesan is served with a cooked sauce mix of tomato sauce with oragano and mozarella cheese.

Ingredients

 Meat
 4 boneless veal cutlets (4 ounces each)
 Dry bread crumbs1/2 Cup (16 tbs)
 Parmesan cheese1/4 Cup (16 tbs), grated
 Salt1/2 Teaspoon
 Pepper1/8 Teaspoon
 Paprika1/8 Teaspoon
 Egg1
 Salad oil1/3 Cup (16 tbs)
 Water3 Tablespoon (Sauce and Topping)
 Tomato sauce1 Can (10oz) (Sauce and Topping)
 1/2 teaspoon oregano, if desired
 Mozzarella cheese slice3 (Sauce and Topping)

Directions

Pound meat until 1/4 inch thick.
Mix crumbs, Parmesan cheese, salt, pepper and paprika.
Beat egg slightly.
Dip meat in egg, then coat with crumb mixture.
Heat oil in large skillet.
Brown meat quickly in oil, about 6 minutes.
(To serve immediately, see below.)
Remove meat to ungreased baking dish, 11 1/2 X7 1/2 X 1 1/2 inches.
Heat water, tomato sauce and oregano in skillet, stirring constantly, until mixture boils.
Pour sauce on meat; arrange mozzarella cheese on sauce.
Cool quickly.
Wrap, label and freeze.
55 minutes before serving, remove Veal Parmesan from freezer and unwrap.
Bake uncovered in 375° oven until done, 45 to 50 minutes.
Note: A 1 pound veal round steak, 1/2 inch thick, can be substituted for the veal cutlets.
Cut into 4 serving pieces.
