6 veal cutlets
 
2 egg whites, slightly beaten
 
1/2 cup bread crumbs
 
4 tablespoons oil
 
2 cups canned tomatoes
 
1 1/2 teaspoons salt
 
1/4 teaspoon oregano
 
3 medium zucchini, sliced 1/5 inch thick

Directions

Dip cutlets first in egg whites, then in crumbs.
Brown cutlets in heated oil in large skillet.
Pour off excess oil.
Add tomatoes, salt, and oregano.
Cover skillet, simmer for 30 minutes.
Last, add zucchini slices, cook, covered, for 20 minutes more.
