Veal And Ham Pie Recipe
Veal And Ham Pie is a traditional picnic recipe. The stuffing of veal, ham and chicken, glazed with beaten eggs and flavored with lemon and white pepper gives the Veal and Ham Pie a divine taste. Meat lover must try this recipe.

8 oz flaky or rough puff pastry or commercial puff pastry
1 1/2 lb stewing veal
4 oz lean, cooked ham
1 1/4 tablespoons finely chopped onion
1 1/4 tablespoons chopped parsley
Finely grated rind of 1 lemon
1/2 teaspoon salt
1/4 teaspoon white pepper
2 1/2 cups chicken stock
1 egg, for glazing
Directions
Prepare the pastry and chill in refrigerator until required.
Trim veal and cut into 1 1/2 inch cubes.
Cut ham into cubes.
Place prepared veal, ham, onion, parsley and lemon rind in deep (5 cups) pie plate or shallow casserole in layers, seasoning each layer with salt and pepper.
Add sufficient stock to come three quarters up the pie plate.
Roll pastry out and cover pie as directed in Steak and Kidney Pie recipe.
Glaze pie with beaten egg and decorate with pastry leaves or a pastry rose.
Place pie on a baking tray and bake in upper third of a hot oven for 30 minutes to cook pastry, then cover pie with a piece of wet greaseproof paper and continue cooking in a moderately slow oven for a further 1 hour or until meat is tender.
Test meat with a skewer if necessary.
