Veal's Pluck In Paprika Sauce Recipe

Ingredients

 2 lb. veal's pluck
 Lard4 1/2 Ounce
 Onions7 Ounce
 Paprika1 Teaspoon
 Garlic3 Clove (5gm)
 Salt1 Teaspoon
 Pinch of marjoram
 Tomato puree1 Tablespoon
 7 oz. lecso
 1 dessert spoon flour
 Celery sprig3

Directions

Soak the veal's pluck in cold water, then wash in fresh water several times; parboil for 20 mins., let it cool, and then cut into strips.
Fry the finely chopped onions till they are a light yellow, add the paprika, tomato puree, crushed garlic and marjoram, and stir for a minute.
Then add the veal's pluck, salt, add a little water, cover with a lid, and let it simmer slowly.
Add a little water if necessary.
When tender, add the lecso and the finely chopped leaves of celery.
Mix flour with a little water, pour over meat, and cook the whole for another 10 mins.
Garnish with mashed potatoes flavoured with fried onion.
