Veal With Wine And Mushrooms Recipe
Ingredients
2 1/2 pounds veal for scallopini
1/4 cup flour
1 teaspoon salt
1/8 teaspoon freshly ground pepper
4 tablespoons olive oil
2 cloves garlic, chopped
1/2 cup finely chopped onion
2 cups sliced fresh mushrooms
2 cups bouillon
2 cups dry white wine
1 teaspoon dried rosemary
3 tablespoons chopped parsley
Directions
Pound veal very thin.
Mix flour with salt and pepper.
Coat veal slices with flour mixture.
Brown slowly on both sides in oil.
As meat browns, transfer to a buttered shallow casserole.
When veal is browned, add garlic, onions and mushrooms to skillet and brown lightly.
Spoon over veal in casserole.
Add bouillon, wine and rosemary to skillet.
Heat and scrape brown crust from skillet.
Pour over veal.
Cover and bake in a 350° F.oven for 45 minutes.
Uncover, sprinkle with parsley and bake 15 minutes longer.
