Ingredients

 Veal cutlets4
 Pepper1
 Butter
 Salt To Taste
 Parsley Butter
 3 green apples
 Water1/4 Pint (APPLE PUREE:)
 Strip of lemon rind
 Sugar2 Teaspoon (APPLE PUREE:)

Directions

Preheat grill at high until red hot.
Sprinkle veal cutlets with pepper and spread each with a little butter.
Place cutlets on oiled rack and grill for 5 minutes on each side or until well done.
Place cutlets on a bed of previously cooked apple puree, sprinkle with salt and top each with Parsley Butter.
To make Apple Puree, peel and core apples and cut into slices.
Place in a saucepan with water and lemon rind and cook until soft.
Remove rind, mash apple well or press through a sieve.
Stir in sugar and place on a heated serving dish.
Keep warm while chops are grilling.
