6 pound breast of veal
 
Oil
 
1 1/2 cups rice, cooked
 
1 large garlic clove, minced
 
1 large onion, chopped
 
1/2 teaspoon pepper
 
3/4 teaspoon rosemary
 
1/2 teaspoon thyme

Directions

1) Cut a pocket into the breast of veal.
2) Mix the cooked rice, garlic, onion, and seasonings together, and stuff the mixture into the pocket of the breast. Use toothpicks to fasten.
3) Place the breast into a baking dish, lightly brush with oil, cover, and bake at 350 degrees for 3 hours.
4) Remove cover and continue cooking for 1/2 hour longer or until meat is tender. Cut open between the ribs and serve:
