Veal Shank Osso Bucco Recipe

Ingredients
5 to 6 pieces of veal shank, 2 in. (5 cm) each
1/2 cup (125 mL) browned flour
1/3 cup (80 mL) vegetable or olive oil
2 medium onions, chopped fine
1/2 cup (125 mL) celery, diced
1/2 cup (125 mL) sliced mushrooms
3 tbsp (50 mL) parsley, minced
1 large carrot, grated
2 garlic cloves, chopped fine
1 tsp (5 mL) oregano or basil
1/2 cup (125 mL) white wine or vermouth
1 19-oz (540 mL) can of tomatoes
Grated rind of one lemon
1 cup (250 mL) chicken broth
1/2 tsp (2 mL) sugar
Directions
€¢ Roll each piece of shank in the browned flour.
€¢ Microwave the oil in an 8-cup (2 L) ceramic dish 5 minutes at HIGH.
€¢ Place the meat pieces in it side by side and microwave, uncovered, 5 minutes at HIGH. Turn the meat.
€¢ Add the remaining ingredients. Cover and microwave 1 hour at MEDIUM, turning the meat twice during the cooking.
€¢ When cooked, remove meat from dish and keep in a warm place.
€¢ Continue cooking the sauce 8 to 10 minutes at HIGH or until it becomes very smooth.
€¢ Coat the meat with the sauce.
