Ingredients
1/4 cup (60 mL) vegetable oil
1 garlic clove, chopped fine
4 to 6 small veal scallops or chops
1/2 tsp (2 mL) paprika
2 medium onions, thinly sliced
2 tbsp (30 mL) flour
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
1/2 tsp (2 mL) basil
1 7 1/2 oz (213 mL) can tomato sauce
1/2 cup (125 mL) water or white vermouth
Directions
€¢ Preheat a browning dish (Corning) 7 minutes at HIGH. Add the oil; heat 2 minutes at HIGH.
€¢ Brush one side of the scallops or chops with the paprika. Without removing the dish from the oven, place the meat in the hot oil, paprika side down. Press each piece of meat down with the fingers for good contact with the bottom of the dish. Microwave 3 minutes at HIGH.
€¢ Turn the meat, add the garlic and onions, microwave 1 minute at HIGH. Remove the scallops or chops from the dish, and add the flour, salt, pepper and basil to the fat; stir. Add tomato sauce, water or vermouth, mix well. Microwave 4 minutes at HIGH, stir. Add the veal, browned side on top, and make sure the bottom part is in the sauce. Microwave 3 minutes at MEDIUM and serve.
