Butter - 4 tbsp
 
Flour - 1/2 cup
 
Veal - 1 1/2 lbs, cut for scallopini
 
Salt
 
Pepper
 
Garlic - 2 cloves
 
Almonds - 2/3 cup, sliced
 
Red vermouth - 2 tbsp
 
Brandy - 2 tbsp.
 
Parsley - for garnish, chopped

Directions

MAKING
1 Dip veal scallops in flour to coat and set aside.
2 In a pan, heat the butter until it starts foaming.
3 Add the veal and sauté for 5 minutes over high heat.
4 Season with salt, pepper and 2 cloves garlic crushed.
5 Add almonds and mix well.
6 Stir in the red vermouth and blend well.
7 In a shallow pan, heat the brandy and carefully touch with a match.
8 Quickly pour the flames over the veal.
