4 4 oz veal scallops
1/4 cup whole wheat flour
2 tbsp olive oil salt and pepper
1 tbsp butter
1 cup zucchini, julienned
2 tbsp lemon juice
1/3 cup dry white wine
Directions
Preheat oven to 350 °F (175 °C).
Dredge veal scallops with flour.
In a skillet, heat oil.
Sear veal scallops on both sides.

Cook in oven 10 minutes or until veal is tender.
In the same skillet, melt butter.
While stirring, cook zucchini.

Top with zucchini mixture.
