4 veal scallopini from leg
 
3 tbsp (45 ml) olive oil
 
2 tbsp (30 ml) maple syrup
 
1/4 tsp (1 ml) tarragon
 
1 tbsp (15 ml) wine vinegar
 
Few drops Trinidad style hot sauce
 
Salt and pepper
 
Lemon juice to taste
 
Paprika to taste

Directions

If butcher has not already pounded veal, place pieces between two sheets of waxed paper.
Flatten with mallet until very thin.
Trim away fat and season generously.
Roll scallopini lengthwise keeping meat fairly taut.
Secure each roll on very long skewer.
Refer to Photo 2 for visual help.
Place skewers on ovenproof platter and set aside.
Mix oil, maple syrup, tarragon, vinegar, hot sauce, salt, pepper and lemon juice together.
Brush mixture over skewers and broil 7 minutes in oven 6 in (15 cm) from top element.
Turn skewers over and season with paprika; baste with maple syrup mixture.
Continue broiling 7 minutes.
Remove veal from skewers.
