2 pounds veal round, sliced 1/4 inch thick
 
Salt and pepper to taste
 
Flour
 
1/2 cup (1/4 pound) butter
 
1/2 pound fresh mushrooms, sliced
 
1 large onion
 
1 sprig each fresh rosemary, parsley, and oregano or marjoram, or 1/4 teaspoon each of the dried herbs
 
1/2 teaspoon salt
 
1/4 teaspoon pepper
 
1 cup dry white table wine
 
1 tablespoon sugar

Directions

Sprinkle meat with salt and pepper, and dredge in flour.
Melt 4 tablespoons ( 1/4 cup) of the butter in a frying pan, and brown meat slowly on both sides; remove to a platter and keep warm.
Saute mushrooms in 2 tablespoons of the butter until golden; remove from the pan and set aside.
Finely chop together the onion, rosemary, parsley, and oregano, and saute in the remaining 2 tablespoons butter until onion is golden brown.
Add mushrooms, salt, pepper, wine, and sugar; cook until hot, but no longer.
Spoon over meat; serve at once to 6 to 8 persons.
