Ingredients
2 tablespoons butter
1/2 clove garlic, finely chopped
2 tablespoons finely chopped onion
1 1/2 tablespoons flour
1 cup well-flavored chicken broth
Salt and freshly ground pepper to taste
4 tablespoons currant jelly
1/2 teaspoon rosemary
6 to 8 thin slices cold roast veal
Directions
Heat butter in blazer pan over moderate heat.
Add garlic and onion and cook 3 minutes.
Stir in flour and let bubble.
Stir in chicken broth and cook and stir until mixture boils and is thickened.
Season to taste with salt and pepper.
Mix in currant jelly and rosemary.
Place over boiling water in pan and carefully put veal slices in sauce.
Cook until veal is thoroughly heated.
