Veal Rolls With Anchovies Recipe
Ingredients
1 pound veal, cut into thin, even slices
1/4 pound mozzarella cheese
1 can anchovy fillets
1/2 cup butter
1/2 cup canned, concentrated bouillon
1 teaspoon chopped parsley
Directions
1. Pound the veal slices lightly until very thin. On each slice place a small piece of cheese and an anchovy fillet. Roll and fasten securely with toothpicks.
2. Heat half the butter in a skillet, add the rolls and brown on all sides. Add one tablespoon of the bouillon, cover the pan, and cook the rolls slowly ten minutes. Remove the meat to a hot platter and keep warm.
3. Add the remaining bouillon to the pan drippings and simmer a few minutes. Swirl in the remaining butter Add the parsley and pour over the rolls.
