Veal Osso Buco Bucco With Braised Endive Recipe

Ingredients
2 lbs (900 g) veal shanks, cut "osso bucco"
3 tbsp (45ml)oil
1 tbsp (15 ml) onions, chopped
1 garlic clove, finely chopped
1 tbsp (15 ml) tomato paste
2 tbsp (30 ml) flour
2 Cups (500 ml) beef stock
2 Cups (500 ml) chicken stock
1 bay leaf
Pinch of rosemary
1/4 tsp (1 ml) ground black pepper
1/4 tsp (1 ml) nutmeg
2 tsp (10 ml) parsley
Salt
4 endives, halved
1/2 Cup (125 ml) mushrooms, thinly sliced
Directions
– In a heavy saucepan, heat oil and sear meat. Add onions and garlic, and stir.
– Add tomato paste and flour.
– Add beef and chicken stock, then season with bay leaf, rosemary, pepper, nutmeg, parsley and salt. Let mixture simmer for about
1 hour.
– Halfway through cooking process, add endives. Add mushrooms 15 minutes before end of cooking time, adjust seasoning and serve,
