Veal N Tomato Recipe

Ingredients
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1 1/2 cups beef broth (homemade, canned or from bouillon cubes)
1 tablespoon tomato paste
1 large tomato, diced 1 onion, peeled and minced
1 cup sliced fresh mushrooms
1 bay leaf
1 1/2 pounds veal for stew, cut in 1-inch pieces
1 teaspoon salt
1/8 teaspoon pepper

Directions
1. Melt butter in an 8-inch square glass baking dish in microwave oven (about 30 seconds at High). Blend in flour. Add broth gradually, stirring until smooth. Stir in tomato paste.
2. Cook uncovered in microwave oven 3 minutes at High; stir once. Add tomato, onion, mushrooms and bay leaf; stir. Cook uncovered
4 minutes at High; stir once.
3. Add meat, salt and pepper to sauce; stir. Cover with plastic wrap. Cook in microwave oven 25 to 30 minutes at Medium, or until meat is tender; stir occasionally and be sure meat is covered with sauce.
4. Remove from oven and let stand covered 5 to 10 minutes.
