Veal Loin Roast Recipe
Ingredients
| Butter | 1 Tablespoon | |
| Olive oil | 1 Tablespoon | |
| Veal loin-3 1/2 to 4 pounds( centre cut) | ||
| Chicken stock | 1/2 Cup (16 tbs) | |
| Salt | 1/2 Teaspoon | |
| Ground pepper | 1 To taste | |
| Bouquet garni-1,(thyme, oregano, bay leaf, and parsley) | ||
| White wine | 1/3 Cup (16 tbs) | |
| Flour | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper white | 1 To taste | |
| Heavy cream | 1 Cup (16 tbs) | |
| Fresh Parlsey-minced,for garnish | ||
Directions
GETTING READY
1)Preheat the oven to 325 degrees.
MAKING
2)Take a pan,melt butter,add olive oil. Brown veal.
3)Now add the chicken stock,salt,pepper and the bouquet garni .
4)Cover and roast for upto 2 hours,keep basting in intervals.
5)When the temperature reads 175 degrees,remove from the oven.
6)Remove the veal,deglaze the pan with white wine.
7)Now pour off the liquid,except for 2 tablespoons in the pan.
8)Now add flour and mix,stir briskly for 2 minutes.
9)Strain the juices from the pan and slowly add to flour and stock mix ,whisk quickly till it becomes thick.
10)Season with salt,pepper and cream.
11)Heat well.
SERVING
12)Slice the roast and arrange slices in over lapping fashion.
13)Pour the sauce and garnish.
