Veal Loaf Recipe

Ingredients

 
1 tsp shortening
 
2 hard boiled eggs, sliced
 
1 lb cooked veal, cut into strips
 
8 oz cooked ham, cut into strips
 
3 shallots, chopped
 
Salt and pepper, to taste
 
1/4 tsp nutmeg
 
Pinch of cayenne
 
1 tbsp unflavored gelatin
 
1/4 cup cold water
 
1 1/2 cup chicken broth
 
1/4 tsp Tabasco sauce

Directions

Rinse a bread pan under running cold water.
Lightly grease with shortening.
Place a few egg slices over bottom of pan.
Cover with veal strips, ham strips and shallots.
Season.
Repeat last 3 steps until ingredients have been used.
Let gelatin foam in cold water.
In a saucepan, combine chicken broth and Tabasco sauce.
Heat through.
Stir in gelatin.
Pour broth over meat.
With a knife, make incisions so liquid penetrates all the way to bottom of pan.
Refrigerate 12 hours.
Unmold.
