4 tsp (20 ml) mild mustard
 
4 slices veal liver
 
3 tbsp (45 ml) flour
 
2 tbsp (30 ml) oil
 
Salt
 
Juice of 3 oranges
 
1 seedless orange, thinly sliced
 
3 tbsp (45 ml) butter
 
3 tbsp (45 ml) Curacao

Directions

–  Preheat oven to 300 °F (150 °C).
–  Coat both sides of veal liver with mild mustard and dredge with flour.
–  In a skillet, heat oil to smoking, sear liver slices for 3 minutes on each side and salt to taste.
–  Place veal liver in an oven-proof serving dish and keep warm.
–  Squeeze orange juice into the same skillet, add butter and Curacao and let mixture boil for 3 minutes.
–  Coat liver with sauce, and garnish with thin slices of orange.
