Veal Hash With Dumplings Recipe

Ingredients
1/3 cup (80 mL) flour
1 tsp (5 mL) salt
1/4 tsp (1 mL) pepper
2 lb (1 kg) veal shoulder, cubed
3 tbsp (50 mL) vegetable oil or butter
1 cup (250 mL) celery, diced
6 small whole carrots or 1 cup (250 mL) carrots, thinly sliced
2 1/2 cups (625 mL) hot water or chicken broth
Dumplings:
1 1/2 cups (375 mL) flour
1 tsp (5 mL) parsley, minced
1/2 tsp (2 mL) savory
2 tsp (10 mL) baking powder
1/2 tsp (2 mL) salt
2/3 cup (160 mL) milk
1 egg
2 tbsp (30 mL) vegetable oil
Directions
€¢ Mix together the flour, salt and pepper. Roll the veal cubes in the mixture. Microwave 3 minutes at HIGH in an 8-cup (2 L) dish.
€¢ Microwave the vegetable oil or the butter. Place the veal cubes in the hot oil, microwave 2 minutes at HIGH, stir, microwave again 2 minutes at HIGH.
€¢ Add celery and carrots, stir. Add water or chicken broth. Cover and microwave 40 minutes at MEDIUM, or until the meat is tender. Stir twice during cooking.
