Ingredients

 1 1/2 pounds boneless veal
 2 tablespoons drippings, margarine, shortening or butter
 Salt1 Teaspoon
 1 1/2 cups water or bouillon
 Carrots4 , diced
 Onions3 , sliced
 Celery1/2 Cup (16 tbs), diced
 4 potatoes, peeled and sliced

Directions

1. Wipe the veal with a clean, damp cloth and cut in 1-inch dice.
2. Brown the meat in a large heavy saucepan in the hot drippings. Sprinkle with salt, add water, cover and simmer 1 hour.
3. Add carrots, onions, celery and potatoes in layers and simmer 30 minutes or longer. Remove the vegetables to a warmed platter. Pour the meat and liquid into the center.
