Easy Veal Fricassee Recipe
Ingredients
| 1 1/2 pounds boneless veal | ||
| 2 tablespoons drippings, margarine, shortening or butter | ||
| Salt | 1 Teaspoon | |
| 1 1/2 cups water or bouillon | ||
| Carrots | 4 , diced | |
| Onions | 3 , sliced | |
| Celery | 1/2 Cup (16 tbs), diced | |
| 4 potatoes, peeled and sliced | ||
Directions
1. Wipe the veal with a clean, damp cloth and cut in 1-inch dice.
2. Brown the meat in a large heavy saucepan in the hot drippings. Sprinkle with salt, add water, cover and simmer 1 hour.
3. Add carrots, onions, celery and potatoes in layers and simmer 30 minutes or longer. Remove the vegetables to a warmed platter. Pour the meat and liquid into the center.
