Barbecue Sauce
 
2 tsp (10 ml) oil
 
1/2 Cup (125 ml) onions, chopped
 
1/2 Cup (125 ml) celery, diagonally sliced
 
1 garlic clove, finely chopped
 
1 tbsp (15 ml) brown sugar
 
1 tbsp (15 ml) mild mustard
 
5 oz (142 ml) canned tomato soup
 
1/2 Cup (125 ml) water
 
1 tsp (5 ml) white vinegar
 
1/4 tsp (1 ml) each, mixed thyme and rosemary
 
Pinch of chili powder
 
Salt and pepper
 
1 lb (450 g) cubed veal
 
1 tbsp (15 ml) oil

Directions

–  Preheat oven to 375 °F (190 °C).
–  In a large skillet, heat oil and cook onions, celery and garlic without browning.
–  Add brown sugar, mustard, tomato soup, water and vinegar, and stir gently, then add spices. Let mixture simmer for 10 minutes, then remove from stove and set aside.
–  In a separate skillet, heat oil to smoking and sear veal cubes.
–  Place meat in an ovenproof dish, coat with prepared barbecue sauce and cook, partially covered, for about 20 minutes.
