Veal Chops Savoyarde Recipe
Ingredients
| Butter | 2 Tablespoon | |
| 4 veal chops, 3/4 in (2 cm) thick, trimmed of fat | ||
| Dry vermouth | 1/4 Cup (16 tbs) | |
| Black forest ham slice | 4 | |
| White sauce | 1 1/4 Cup (16 tbs), heated | |
| Gruyere cheese | 1 Cup (16 tbs), grated | |
| Dash paprika | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
? Heat butter in large frying pan over medium heat. Add chops and cook 4 to 5 minutes. Turn chops over, season and continue cooking 4 to 5 minutes; adjust time depending on size.
? Transfer cooked veal to baking dish. Pour vermouth into frying pan and cook 1 minute over high heat; pour over chops. Cover each with slice of ham, layer of white sauce and layer of cheese. Season and sprinkle with paprika.
? Broil 3 minutes to melt cheese, and serve.
