Ingredients

 Olive oil2 Teaspoon
 Onions1 Cup (16 tbs), chopped
 Mushrooms1 Cup (16 tbs), minced
 Garlic1 Clove (5gm), chopped
 Veal10 Ounce, cut into strips
 Canned tomatoes2 Cup (16 tbs), drained
 Wine vinegar2 Tablespoon
 Dijon Mustard1 Tablespoon
 Salt and pepper parsley, chopped

Directions

In a large non stick skillet, heat oil.
Cook onions, mushrooms and garlic 5 minutes or so.
Add veal strips.
Sear 5 minutes.
Fold in remaining ingredients.
Season to taste with salt and pepper.
Over low heat, simmer 10 minutes or so.
Spoon veal and vegetables over a bed of brown or wild rice, if desired.
Garnish with parsley.
