Veal And Pork Chops Creole Recipe
Ingredients
6 veal chops
1/2 teaspoon sugar
6 pork chops
1 teaspoon Worcestershire sauce
4 1/2 tablespoons lard or fat
2 bay leaves
2 onions, minced
1 tablespoon minced parsley
3 cloves garlic, minced
1 tablespoon minced celery
3 tablespoons flour
2 tablespoons minced green pepper
1 large can tomatoes
2 sprigs thyme
Salt and pepper to taste
Directions
Wipe the chops with a cloth, melt the fat in a Dutch oven, and let the chops steam until brown.
Take them out and set them aside.
Put the onions and garlic in the pot, let them brown, and stir in the flour until it is brown.
Add the tomatoes and cook 5 minutes.
Add the chops and all other ingredients.
Simmer for 1 hour.
