Vaquero Beef Dish Recipe
Ingredients
| Ground beef | 1 1/2 Pound | |
| 1 c. coarsely chopped onion | ||
| Garlic | 1 Clove (5gm), minced | |
| Shortening | 1 Tablespoon | |
| Salt | 2 Teaspoon | |
| Chili powder | 2 Teaspoon | |
| Paprika | 1 Teaspoon | |
| Oregano | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Tomatoes | 1 1 Pound | |
| Tomato Paste | 1 6 Ounce | |
| Shredded Cheddar cheese | 2 Cup (16 tbs) | |
| 1 6-oz. bag corn chips | ||
Directions
Saute the beef, onion and garlic in the shortening until the onion is soft and the beef is lightly browned.
Add the seasonings, tomatoes and tomato paste and stir.
Cover and simmer for 25 to 30 minutes or until the beef is cooked and flavors are blended.
Stir in 1 cup cheese and allow cheese to melt.
Stir in 2 cups corn chips just before serving.
Serve over remaining corn chips and sprinkle with remaining cheese.
