Vanilla-Strawberry Cookies Recipe

Ingredients
1/3 cup plus
2 teaspoons all-purpose flour
1/2 teaspoon vanilla extract
1/4 teaspoon grated lemon peel
1/4 teaspoon double-acting baking powder
1 tablespoon ice water
2 teaspoons reduced-calorie strawberry spread (16 calories per 2 teaspoons)
1 tablespoon plus 1 teaspoon margarine
1 tablespoon granulated sugar
Directions
Onto sheet of wax paper or a paper plate sift together flour and baking powder; set aside.
In small bowl cream margarine with sugar; add vanilla and lemon peel and stir to combine.
Add sifted flour and ice water and mix to form dough.
Preheat oven to 375°F.
Between 2 sheets of wax paper roll dough to about 1/8-inch thickness; remove top sheet of paper and, using a 2 1/2-inch round cookie cutter, cut out cookies, placing cookies on nonstick baking sheet.
Form scraps of dough into ball and repeat rolling and cutting procedures until all dough has been used (should yield 12 cookies).
Bake for 10 to 12 minutes; using a spatula, remove cookies to wire rack to cool.
Top center of each cooled cookie with an equal amount of spread.
