100 gms. plain flour
 
100 gms. white butter
 
120 gms. castor sugar
 
2 egg yolks
 
4 egg whites
 
600 ml. milk
 
1/2 tsp. vanilla essence

Directions

Heat butter, in a 1.5 litre dish, on 100% power for 1:00 minute.
Add the flour and microwave on 100% power for 4:00 minutes.
Stir 2 -3 times during cooking.
Gradually add the milk, mix well to avoid lumps.
Microwave on 100% power for 5:00 minutes.
Add the castor sugar and essence.
Mix and cool slightly.
Beat in the egg yolks.
Whisk the egg whites separately, until stiff peaks form and gently fold into the cooled mixture.
Pourthe mixture, into a greased souffle dish.
Pre heat the oven on 'convection' at 190°C.
Bake the souffle at 190°C for 60:00 minutes.
