Vanilla Bean Cheesecake Recipe
Ingredients
1 pint low fat cottage cheese or ricotta cheese
1/2 pint low fat yogurt
4 eggs
1/2 cup sugar
1 1/2 teaspoons vanilla extract
1 inch piece vanilla bean scraped
Directions
Place in a blender container the cottage cheese, yogurt, eggs, sugar vanilla, and the scraped part of the vanilla bean.
Blend just until smooth and pour into a lightly buttered 9 inch square pan.
Place in a pan of hot water and bake in a 325° oven for 40 minutes or until set.
Let cool and chill.
