Vanilla Wafer Dessert Recipe
Ingredients
| Vanilla wafers package | 1 | |
| Icing Sugar | 1 Cup (16 tbs) | |
| Butter margarine | 1/2 Cup (16 tbs) | |
| Eggs- 2 no-€™s, separated into yolks and whites | ||
| Apricots | 1 Can (10oz) | |
| Pineapple | 1 Can (10oz), crushed | |
| Heavy cream- ¾ cup, whipped | ||
Directions
GETTING READY
1. Line 9 inch x 12 inch pin tin/ baking dish with half quantity wafer crumbs. Keep aside.
2. In a medium sized bowl, place whites and beat till stiff. Keep aside.
MAKING
3. In a medium sized bowl, combine butter, egg yolks and sugar. Mix well till combined.
4. Add stiffly beaten egg whites and fold gently using a rubber spatula.
5. Spread this mixture evenly over lined baking dish.
6. Top evenly with layer of apricots and pineapple.
7. Top pineapple layer with whipped cream and finish with even coating of remaining wafer crumbs over it.
8. Refrigerate for at least 5 hours till chilled or set overnight.
SERVING
9. Cut into slices and serve chilled with whipped cream.
