Ingredients

 
1 tablespoon confectioners' sugar
 
1/4 cup butter or margarine
 
3 tablespoons flour
 
1 cup milk
 
4 egg yolks
 
1/2 cup sugar
 
1 tablespoon vanilla extract
 
4 egg whites

Directions

1. Butter bottom of a 1 1/2-quart souffle dish (straight-sided casserole) and sift confectioners' sugar over it.
2. Heat butter in a saucepan. Stir in flour. Gradually add milk, stirring until thickened and smooth. Remove from heat.
3. Beat egg yolks, sugar, and vanilla extract together until mixture is very thick. Spoon sauce gradually into egg-yolk mixture while beating vigorously. Cool to lukewarm.
4. Using clean beater, beat egg whites until rounded peaks are formed. Spread egg-yolk mixture gently over egg whites and fold until thoroughly blended. Turn mixture into prepared souffle dish. Set dish in a pan of very hot water.
5. Bake, uncovered, at 400°F 15 minutes. Turn oven control to 375°F and bake 30 to 40 minutes, or until a knife inserted halfway between center and edge comes out clean.
