Directions

In a 1 1/2-quart casserole combine apple juice and the 1 tea-spoon vanilla Micro-cook, covered, on 100% power (HIGH) for 2 to 3 minutes or till the mixture boils.
Meanwhile, peel the pears, leaving stems intact.
Insert an apple corer into the blossom end of each pear and carefully remove core.
Brush the pears with lemon juice.
Arrange fruit upright in casserole.
Spoon apple juice mixture over pears.
Micro-cook, covered, on 100% power (HIGH) for 6 to 10 minutes or till pears are fork-tender, rotating dish and basting with cooking liquid every 3 minutes.
Cover and chill fruit in cooking liquid.
At serving time, drain pears; reserve liquid.
For topper, in a small bowl stir together Neufchatel cheese, the 1/2 teaspoon vanilla, and enough of the reserved cooking liquid (about 4 teaspoons) to make a topper of desired consistency.
Serve some of the topper over each pear
