Vanilla Jelly Cookies Recipe
Ingredients
| 1/2 cup diet margarine | ||
| Granulated Sugar | 1/3 Cup (16 tbs) | |
| Vanilla extract | 1/2 Teaspoon | |
| All purpose flour | 1 Cup (16 tbs) | |
| Baking powder | 1/8 Teaspoon | |
| Salt | 1/8 Teaspoon | |
| Currant jelly | 4 Teaspoon | |
Directions
1. Preheat oven to 400° F.
2. Using electric mixer at high speed, beat together diet margarine and sugar replacement in medium bowl until creamy; beat in vanilla extract. With mixer at low speed, stir in sifted flour, baking powder and salt; blend well.
3. Roll dough into 1-inch balls; place 1 1/2 inches apart on cookie sheet with nonstick finish. Slightly flatten each ball with bottom of floured glass.
4. Make slight depression with tip of little finger in center of each cookie; fill each with 1/4 teaspoon currant jelly. Bake for 10 to 12 minutes. Remove cookies to wire rack to cool.
